Abstract: As an alternative to fermented milk drinks, in the present work a yoghurt based on whole milk, incorporated with aloe vera (AV) and essential oil (AE) orange, materials from underutilized resources and waste was developed. For this AV was used heat treated at 70 Celsius degree, after previous sensory testing in dairy matrices with AE orange, lemon, grapefruit, tangerine, lemon verbena, mint, lemon verbena, lavender, mint and ginger essential oil was selected orange. The ingredients of the formulation had a marked influence on the proximal composition, physicochemical properties, antioxidant activity, rheological parameters and service life of the samples. The addition of AV has a positive effect on the protein content of yogurt, physico-chemical and rheological parameters. Furthermore, addition of orange AE produces changes in the fat content, antioxidant activity and microbiological parameters. The interaction between the AE and the AV caused significant changes in the properties of the yogurt obtaining an increase in protein content, antioxidant capacity and viscosity development of lactic acid bacteria which causes decreased fat content. In all cases and after the sensory analysis of the products obtained, they maintain their characteristic flavor and aroma storage for 21 days.
Description: Como alternativa a las bebidas lácteas fermentadas, en el presente trabajo se desarrolló un yogur con base a leche entera, incorporado con aloe vera (AV) y aceite esencial (AE) de naranja, materiales procedentes de recursos infrautilizados y residuos. Para ello se utilizó AV tratado térmicamente a 70 grados Centígrados, tras pruebas sensoriales previas en matrices lácteas con AE de naranja, limón, toronja, mandarina, cedrón, hierba buena, hierba luisa, lavanda, menta y jengibre, se seleccionó el aceite esencial de naranja. Los ingredientes de la formulación tuvieron una marcada influencia sobre la composición proximal, propiedades fisicoquímicas, actividad antioxidante, parámetros reológicos y vida útil de las muestras. La adición del AV ejerce un efecto positivo sobre el contenido de proteína del yogur, parámetros reológicos y fisicoquímicos. Por otro lado, la adición del AE de naranja produce cambios en el contenido de grasa, actividad antioxidante y parámetros microbiológicos. La interacción entre el AE y el AV provoca cambios significativos en las propiedades del yogur obteniendo un aumento en el contenido de proteína, capacidad antioxidante viscosidad y desarrollo de bacterias ácido lácticas lo que provoca la disminución del contenido de grasa. En todos los casos y tras el análisis sensorial de los productos obtenidos, estos mantienen su sabor y aroma característicos durante 21 días de almacenamiento.
