Abstract: The objective of this research was to analyze the presence of residues of antibiotics (sulfonamide, enrofloxacin and tylosin) in chicken breast marketed in Modelo and América markets in the city of Ambato. A stratified sampling was performed considering each market as a stratum and within this a simple randomized study was carried out by drawing lots. Of the Model market, 26 samples were taken and 27 samples were taken from the American market. With a total of 53 samples. Samples were analyzed by ELISA. In the Model market there are residues of the antibiotic sulphonamide in 9 chicken meat retailers with a total average of (4.16 ug / kg) and 2 residues of enrofloxacin (15.11 ug / kg) were obtained. In the Americas market, residues of the antibiotic sulphonamide were found in 13 premises with a total average of 15.57 ug / kg and in five sites residues of enrofloxacin (14.18 ug / kg) were detected. The antibiotic tylosin was not detected in any of the two analyzed markets. It is concluded that residues of antibiotics sulfonamide and enrofloxacin exist in chicken meat but values do not exceed 100 ug / kg established by Codex Alimentarius (2015) and European Commission (2010) standards.
Description: xiv RESUMEN El objetivo de esta investigación fue analizar la presencia de residuos de antibióticos (sulfonamida, enrofloxacina y tilosina) en pechuga de pollos comercializados en los mercados Modelo y América en la ciudad de Ambato. Se realizó un muestreo estratificado proporcionado considerando cada mercado como un estrato y dentro de este se realizó un estudio simple al azar por medio de sorteo. Del mercado Modelo se tomaron 26 muestras y del mercado América se tomaron 27 muestras. Con un total de 53 muestras. El análisis de las muestras se realizó a través de ELISA. En el mercado Modelo existen residuos del antibiótico sulfonamida en 9 locales expendedores de carne de pollo con un promedio total de (4,16 ug/kg) y en 2 locales se obtuvieron residuos de enrofloxacina (15,11 ug/kg). En el mercado América se encontraron residuos del antibiótico sulfonamida en 13 locales con un promedio total de (15.57 ug/kg) y en cinco locales se detectaron residuos de enrofloxacina (14,18 ug/kg). No se detectó el antibiótico tilosina en ninguno de los dos mercados analizados. Se concluye que existen residuos de antibióticos sulfonamida y enrofloxacina en la carne de pollo pero los valores no superan los 100 ug/kg establecidos por las normas del Codex Alimentarius (2015) y la Comisión Europea (2010).
