| Resumen : | El presente proyecto de investigación tiene como objetivo identificar a la papa como patrimonio alimentario y su importancia para la revalorización del turismo gastronómico del cantón Ambato, en el cual se identificó como problema el desconocimiento del patrimonio alimentario en el turismo gastronómico esto debido a la desvalorización de las raíces culinarias y a la poca difusión de la importancia simbólica de los productos alimenticios. Estructurando así el trabajo de investigación con recolección de información en donde se aplican las variables del tema principal, lo cual se respalda con un diseño de investigación no experimental transversal con enfoque cuantitativo ya que sus resultados se construyen mediante una encuesta con escala de Likert de cinco opciones de respuesta haciendo énfasis a la importancia de la papa en la cultura gastronómica de los ambateños. Esta encuesta se realizó a un total de 323 personas arrojando como resultado la validación de la hipótesis alternativa propuesta por el autor de la investigación, teniendo una correlación entre el patrimonio alimentario y el turismo gastronómico, permitiendo así llevar a cabo la elaboración de una ruta turística gastronómica dirigido a todo público. Beneficiando así al desarrollo culinario del cantón mediante la degustación de sus platos típicos más importantes dándole protagonismo principal al producto de la papa identificándolo, así como parte del patrimonio gastronómico de la ciudad y la provincia. |
| Descripción : | The present research project aims to identify the potato as food heritage and its importance for the revaluation of gastronomic tourism in the canton of Ambato, in which was identified as a problem the lack of knowledge of food heritage in gastronomic tourism due to the devaluation of the culinary roots and the little dissemination of the symbolic importance of food products. Thus structuring the research work with information gathering where the variables of the main topic are applied, which is supported with a non-experimental transversal research design with a quantitative approach since its results are built through a survey with a Likert scale of five response options emphasizing the importance of the potato in the gastronomic culture of the ambateños. This survey was conducted to a total of 323 people resulting in the validation of the alternative hypothesis proposed by the author of the research, having a correlation between food heritage and gastronomic tourism, thus allowing to carry out the development of a gastronomic tourist route aimed at all public. Thus benefiting the culinary development of the canton through the tasting of its most important typical dishes giving prominence to the product of the potato identifying it as part of the gastronomic heritage of the city and the province |
