The present research aims to study how to generate a suitable interior design for a traditional candy factory. The aim is to improve the production of toffee by complying with the regulations of the National Agency of Regulation, Control and Sanitary Vigilance (ARCSA), performing good hygiene practices for food processing establishments categorized as artisanal and organizations of the popular economy system and solidarity. Cultural identity establishes the development of a nation and the production of an architecture without character that shapes current areas of life, makes man lose his identity with his own environment, while emptying it of cultural stimuli. Therefore, interior design will be conceptualized from the cultural identity of the city of Baños de Agua Santa through a bibliographical and field research to determine the design parameters to implement in the candy factory. Results from surveys and observation sheets identified problems in the factory and customer perceptions of cultural identity. In the investigative process it is determined that nature is present in the progress of the city and the contribution of the care of it is relevant to not lose the characteristics of its natural environment. In fact, the most important characteristics for the proposal are achieved through the reuse of existing materials in space, complemented by the use of bamboo and volcanic stone.
