    Análisis de la calidad en el proceso productivo de elaboración de quesos en la empresa Yanahurco de Juigua del cantón Pujilí

    The present study is based on the analysis of the quality of the raw milk which is processed to obtain cheese at the Yanahurco de Juigua company in the Pujilí city, in this way, being a product with many nutritional and sanitary characteristics, a system is proposed of quality control in the reception area whose objective is to know the state of the raw material and its variability since it is the beginning of the process, the study starts from the use of verification sheets for two characteristics, mastitis and acidity, including an attribute and a variable of raw milk respectively, by obtaining data thanks to the help of sampling plans to inspect the batches, they are represented by means of control letters that indicate the variability and compliance with standards according to the INEN regulations in force in Ecuador, subsequently a sigma analysis is proposed to determine the level at which the process is and, of course, In order to grant continuous improvement actions, reducing variability, directly benefiting suppliers and the company. Once the use of control charts is implemented, the variability and compliance with the standardization of both titratable acidity and mastitis in raw milk are determined, qualifying the process as unstable and incapable in terms of analysis by variables, because more than one point is out of control on the XS chart and a capacity indicator Cp = 0.476 and a sigma level Zc = 1,29. In the case of the analysis by attributes, the process is determined as adequate, with a Yield indicator of 97.9 and the approximate sigma level is 3.5. Finally, improvement strategies for the process are proposed taking into account six sigma criteria to reduce variability and comply with the standards.

    Aplicación de herramientas de manufactura esbelta para la disminución de desperdicios en el área de terminado de la producción de pieles

    This project is aimed at the leather industry that is positioned among the most important of Tungurahua Province in Tenería San José, a more than 40 years old company in the industry in Ambato City. Leather manufacturing involves complicated processes that require an adequate process to obtain quality garments. The project aims to eliminate bottlenecks and waste in the leather finishing process. This area has activities and operations such as: coloring, pressing, ironing, measuring and storage. This project development begins with times measurement to carry out a time and motion study of the operations for the production with the highest rotation within the company. Next, an initial diagnosis was made using tools such as value flow maps to eliminate activities that have not added value. The 5S methodology was implemented, starting from a current evaluation of the plant, the changes and actions required by this tool are applied and implementation is evaluated to perform a numerical analysis. Other tools are proposed in the project due to different factors, for example, for the existence of bottlenecks, line balancing is proposed. For the lack of control and production planning, a proposal is established with the Kanban tool. In addition, the application of visual control is proposed to have a better communication and facilitate the production flow in the plant. The research proposes possible formats for the implementation of each of these techniques and to standardize, as well as certain indicators that could be useful for the identification of improvement and production compliance.

    Balanced score card para el GAD municipal del cantón Salcedo

    The main challenge lies in the lack of management indicators in the Autonomous Decentralized Municipal Government of Salcedo, which restricts the ability to evaluate its institutional performance. The objective of this study is to implement the Balanced Score Card matrix in the entity, addressing the essential perspectives. To this end, a quantitative approach was adopted, involving the collection and analysis of statistical data, as well as an exhaustive bibliographic review to obtain updated and accurate information. In addition, field research was conducted involving interviews with the director of the Administrative Directorate and key officials, along with surveys and direct observation at the GAD's facilities. This methodology made it possible to obtain relevant data on institutional processes and staff perceptions. The results obtained through surveys directed to 13 officials highlight that 54% of the respondents identify deficiencies in the processes, 85% point out the lack of management indicators and function manuals, and 46% consider the BSC to be effective in improving decision-making. Seventeen management indicators are derived from the literature research, covering customer, financial, internal processes, and learning perspectives. In conclusion, the implementation of the BSC will allow for more informed decision-making and effective monitoring of institutional performance, which will facilitate immediate intervention in the event of deviations in the indicators. This will contribute to improving the efficiency and effectiveness of the institution in achieving its objectives.

    Diseño de un sistema de gestión ambiental basado en la norma ISO 14001:2015 para la empresa textil pantuflas cm original ubicado en el cantón Pelileo

    Worldwide, several tools have been developed for adequate environmental management that can be applied to organizational systems, processes and products. All these tools are aimed at minimizing environmental impacts and risks. This project proposes an Environmental Management System for the company Pantuflas CM Original, so that it becomes an instrument that allows compliance with the requirements of ISO 14001:2015. First, a diagnosis of the current environmental situation of the company Pantuflas CM Original was carried out. An environmental policy is proposed with principles aimed at the continuous improvement of the environmental management system, mentioning that its proper functioning will depend on the company's top management, as well as the collaboration of all the company's personnel. Based on the check list carried out in the company with respect to the requirements demanded by the ISO 14001: 2015 standard, it was shown that the levels of compliance with the environmental management system (EMS) compared to the standard taken as base, they are very low with only 37% compliance with the entire standard. The main shortcomings are the lack of documentation, records and procedures required by the standard as documented information. Finally, an environmental management manual is proposed as the key documentation for the environmental management system, consisting of 8 procedures, 21 records, 1 instruction manual and 10 documents that guarantee the correct operation of the EMS in order to improve the company's environmental performance.

    Estudio de tiempos y movimientos en el área de acabado de la curtiduría Tungurahua S.A.

    Industrial development has undoubtedly been favored, thanks to processes standardization and continuous improvement applied in most industries. Results of an efficient production, without any doubt, depends on an optimal planning based on standard times and production capacities, for this reason, in this research a time and motion study has been carried out at finishing area of Tannery Tungurahua S.A. In this study, the current working method for each of the finishing processes of San Marino school leather is initially described, through the elaboration of its flow chart elaboration and the identification of the activities corresponding to each procedure. Thus, analytical cursograms of each process are elaborated, in order to analyze in a more detailed way the product journey and type of operation that is carried out. Then calculation of the standard times are carried out, starting from activities coding, then both operators’ performance factor is calculated through the Westinghouse method, as well as supplements using established valuations by the ILO. Consequently, production capacities that will allow each process to be analyzed are calculated according to leather belts number that are manufactured, in this way, an average of 385 leather belts per day was obtained. As an improvement proposal, it is suggested to apply the SMED methodology for machines preparation and for general operations development, tool focused on the adhering, pigmenting and sanding processes, evidencing time reductions by 25.25%, 38.18% and 18.27% respectively. In the same way, it is proposed to apply the Theory of Constraints for the adhering process, which turned out to be the bottleneck requiring a time of 276.16 seconds. Finally, it is recommended to purchase an electric pallet truck that allows optimizing the transport times during batches transfer in order to improve handling units and to save operators integrity.

    Businesses operating in 21st century are face many key challenges, including profitability, competitiveness, globalization, speed of change, economic growth, and technology, constrained by low production capacity due to lack of upgrading. and standardization of the processes, for which in the present research work a time and motion study is developed at slaughterhouse E.T "Elina Torres" in production processes of its bovine line. Study is based on the activities of the slaughter process description through process diagrams development, as well as the time study analyzing performance factor, number of samples and supplements to establish standard times. production process and determine the production capacity, to validate the improvements through the FlexSim software As a result, standard times of each process were obtained from the disinfection bath to the boat, obtaining a standard time of 5.64 minutes in the bleeding process, equivalent to an installed weekly production capacity of 425 slaughtered cattle. Therefore, it was determined that processes have activities that do not add value that are directed to the lack of order, cleaning, generating downtime due to the search for materials, in addition to an inadequate balancing of production lines, having workstations with unproductive times, therefore, improvements such as: application of 5s and line balancing are established. When simulating the current and proposed situation, it is observed that there is an increase of 96 cattle per week, which represents a 22.59% improvement, in addition, an efficiency of all processes is achieved with 92%, eliminating activities that do not add value and also unproductive time establishing work instructions as part of improvement control.

    Estudio de tiempos y movimientos en la empresa de calzado Pacco Baroti

    The work was carried out at Pacco Baroti, a company dedicated to the manufacture of footwear, which needed to improve efficiency in the production of its moccasin model F001 HB(N02) and standardize its production processes in the areas of cutting, roughing, assembly and finishing. After a detailed review, unnecessary activities, such as inspections, were identified as delaying production. To solve this problem, we used the Delphi Method, a technique for consulting experts (in this case applied to the company's workers through a series of questions). As a result, the moccasin model F001 HB(N02) was selected as the product with the highest demand. Then, analytical and synoptic diagrams will be elaborated to analyze and understand the production process in a general way. From this, a time and motion study is carried out to calculate the standard production times and the company's capacity. With the help of the "5 whys" methodology, unnecessary activities are identified and eliminated, thus reducing production times and increasing the company's capacity. In addition, a line balance was carried out to determine the optimum number of operators in each production area. As a result, production times were reduced, the company's capacity was increased by 4.84% and the optimum number of operators in each production area was determined.

    The present research project in the first instance, a general description of the company is made, followed by the selection of the slipper models for the study through an ABC analysis and considering the requirements of the production department; furthermore the state of the current situation of the company is exposed in detail through the organization's 2D and 3D layout, as well as the process map and work-study diagrams that allow understanding the production flow and the areas susceptible to a gets better. The methodology for the study of times and movements used begins with the selection of the operator, followed by the calculation of the number of observations based on the criteria of General Electric, continuing with the assessment of the work rate with the Westinghouse system and the assignment of supplements according to the International Labor Organization (ILO), to conclude with the standard time calculation. Subsequently, the production capacity is calculated in order to identify the bottleneck, which restricts the production flow, establishing the trimming as one of the main process to be improved. The improvement proposal, as a first point, contemplates determine the standard times that will facilitate production planning and as a second point, the development of a procedure’s manual and work instructions directed to the storing process to instruct the operators of the method of adequate work for the standardization of their activities.

    Estudio de tiempos y movimientos para el mejoramiento de los procesos productivos en el área de post cosecha de la empresa florícola Flores La Unión

    The purpose of this research work was to propose a proposal for improvement in the production process within the post-harvest area of the flower company FLORES LA UNIÓN, a proposal that considers; First, to propose an efficient work method, with a technical investigation, consequently with its correct implementation, it was possible to increase the productive capacity within the facilities. For the research work, three stages were considered: the collection of information on the current production process, the approach of a proposal for improvement in said process and finally the validation of the improvements with a simulation within the production environment. Most of the sales made by the company Flores la Unión are carnations to the country Russia, through an ABC analysis it was determined that the product with the highest commercialization is the select red carnation, the present study of times and movements focused on the production of said product, through the study carried out, it was determined that the productive capacity of the company is 166 Qb boxes of select red carnations per day, which is equivalent to 2656 bunches of carnations per day and 66400 carnation stems. When the post-harvest was installed, there was no previous work study, currently there are delays when meeting the flower demand, at the end of the work day, there are boxes left to pack, which has as a consequence expenses for the company such such as paying overtime, to improve the productive capacity, it was suggested to acquire a new stretcher machine and hire new personnel for the immersion area, for which a simulation was carried out in the Flexsim software to validate the proposals, with the results obtained an improvement is observed In the process, the production capacity went from 166 Qb boxes per day to a total of 234 Qb boxes, that is, 68 additional Qb boxes of carnations are packed within a work day, there is an improvement of 42,767%, with which corroborates that the proposed improvements are effective, covering a part of the excess demand for existing carnations.

    Estudio de tiempos y movimientos para el proceso productivo de la lavandería Dervith Colors

    The present research work was developed in the Laundry Dervith Colors in the production process to obtain the color Stone 1 ½ with crafts (broken or whiskers) being the preferred color by customers. A study of times and movements was applied with the aim of standardizing the work done and therefore improving the efficiency of the processes, for which initially the current situation of the company was identified with the collection and survey of activities organizing them in analytical cursograms, man-machine diagrams, flow diagrams among other tools, This was possible through interviews with the person in charge of the company and the manager in addition to direct observation in the field visits carried out. For the taking of times of the activities, continuous timing was used, then the standard time per activity was calculated based on the performance factor and supplements according to the parameters already established. In the development of the research, the shortcomings in the productive process are identified in order to select the appropriate tools for the improvement of the working method; this is how the standardization of the working method is established through the work instructions in which the reduction of 32.35 minutes is reflected, which represents the improvement of 17.37%, as well as the improvement of the distribution of work and machines is evidenced in the increase of the service capacity from 8 batches / day to 11 batches / day with three synchronous machines. Finally, with the balance of lines it is possible to balance as much as possible the productivity times in each workstation but mainly the one used by the operators involved in these activities, thus achieving the reduction of leisure time from 90.15 to 25.36 minutes and the reduction of six workstations to four and therefore the number of operators since one operator is employed for each station, obtaining a working method with 87.34% efficiency.

    The unproductive times, non-standardized times, and unnecessary movements in the production area of the company has generated a low productivity and non-delivery to customers, so, this research project deals with a study of times and movements in the process of injection of shoe soles in the company PREPLAST to increase production levels. The research starts from the identification of the current situation in which the productive process of the company is located, collecting information on all its processes and facilities through direct observation and interview with the administrator and the production manager. Likewise, an analysis has been carried out with the sales histories of the last year provided by the administrative area, managing to identify that the Lili expanso chocolate 37 sole is the most demanded product, therefore, this model of sole was the object of study in the present research. Through the measurement of times by timing, development of flowchart, analytical diagram, synoptic diagram, man-machine diagram, route diagram, plant redistribution and application of the SMED methodology, it is possible to establish improvements in the productive process of the company. As a result of the present research, it has been possible to establish the standard time for each area that makes up the production process of the most demanded soles, and from the times and distances traveled, a redistribution of plant has been proposed in order to minimize the transportation costs carried out. Likewise, the preparation time of the injector has been reduced by applying the SMED methodology, increasing the number of soles produced in a working day.

    Estudio de tiempos y movimientos para la optimización del proceso productivo de la empresa “SPLENDID SU LAVANDERÍA”

    The present research project proposes to carry out a times and motion study in the company Splendid su Lavandería for garment washing service in order to standardize and seek improvements in the process. The current situation of the company has been identified by collecting important information regarding all its processes and facilities through direct observation of each area and talks with the workers, in addition, a survey was applied to general manager because she knows all the processes. An ABC study of historical data of the company was applied, managing to identify that regular washing service (washing by weight) has greater profitability, in this service entire study reflected in the document is focused. To obtain the necessary data for the development of project, a time measurement was carried out by timing, at the same time that activities and movements carried out by each worker in their area are detailed; The information obtained is organized through tables, flowcharts, layout and bimanual diagrams. Among the improvements, it is proposed to increase service capacity of bottleneck, in addition to make changes in the current plant layout by applying the SLP method (Systematic Plant Layout Planning); and to visualize changes made, a simulation was developed in FlexSim. Finally, the procedure manuals of the process were elaborated, as well as instructions for the folding area and for the management of the software used for the invoicing and registration of garments, managing to help employees in execution of their activities, being these a guide to obtain planned results; of the proposals, a reduction of 16.94% in the total distance traveled and an improvement of 28.12% in its service capacity are calculated.

    Estudio de tiempos y movimientos para mejorar la productividad en el área de producción de floreros en la empresa “Master Fibra”

    The purpose of this research project is to improve the productivity of the company MASTER FIBRA through the development of a study of times and movements in the production area of vases; the application of this tool allows improving the production line through the standardization of processes and reduction of unproductive times, thus increasing the capacity and minimizing production costs. In the first instance, an initial situation analysis was carried out by collecting information on the production processes carried out in the different sheds that the company owns, focusing mainly on the vase production areas, which is the subject of the study. Since the company has 44 models of flower pots, an ABC analysis was applied in order to analyze the manufacturing process of the model with the highest demand. Subsequently, all the information on the Milan flower pot, known as the star product, was documented through flow charts, characterization sheets, process, analytical and route diagrams, and the construction of the layout. Through the application of the time and motion study, the normal and standard time and the daily capacity for each of the processes were calculated. From this, the bottleneck and problems in the production line were identified, such as the inadequate distribution in its facilities, for which the SLP (Systematic Plant Layout Planning) methodology was proposed in order to reduce the distances between areas, also eliminating unnecessary movements. With the proposal, a 1,49% improvement was obtained with respect to the current one, reducing the standard time from 429,82 min to 423,82 min.

    Estudio del trabajo en los procesos productivos de la empresa de fabricación de suelas “Multinyec”

    This thesis investigates the work processes within the production operations of "MULTINYEC," a company specializing in sole manufacturing. The research emphasizes the necessity of examining work activities to enhance operational efficiency, reduce manufacturing times, and increase overall productivity. Through a meticulous analysis of critical operations in areas such as milling, injection molding, and packaging, unnecessary activities were identified and eliminated, and time standards to produce sports soles were established. The study employed a comprehensive approach to gather detailed and accurate information, utilizing various data collection techniques. These included direct observation within the company’s facilities, informal interviews with production staff, and an immersive investigation into the workplace environment. Additionally, the research involved a thorough review of documents related to work methods and time-motion studies, coupled with interviews to collect both qualitative and quantitative data. The documentation of activities in each process area was achieved with flowcharts, synoptic and analytical cursograms, man-machine diagrams, and the application of the SMED (Single-Minute Exchange of Die) methodology. The current production methods were rigorously analyzed through the technique of detailed questioning, leading to the identification of potential improvements by eliminating, combining, or simplifying operations. As a result of these efforts, the study demonstrated a notable enhancement in the company's productivity, with a 6.24% increase compared to the existing production methods. This thesis not only provides a detailed examination of the work processes at MULTINYEC but also presents actionable insights and recommendations for further efficiency improvements.

    Gestión por procesos con un enforque en el riesgo operacional en la empresa “INDSOL”

    INDSOL, recognized as a leader in the toilet paper industry, stands out for its commitment to excellence and innovation in production. Despite its position, the company faces challenges in process management, since problems related to standardization and operational risks in the manufacture of industrial toilet paper were identified. After an analysis, the need to address these problems became evident, and a process of identification and classification of strategic, operational, and support processes was initiated, followed by the creation of a process map. Focusing specifically on the operational processes, seven processes were identified and detailed in the process sheets. The investigation was extended to the identification of operational risks, using checklists and failure modes and effects analysis (FMEA). This analysis revealed seven critical risks in the processes, which were addressed through the creation of work instructions and procedures designed to provide effective solutions to each identified risk. To improve the standardization of processes, a procedures manual was developed, which provides detailed information and documents that contribute to the effective control of the processes. This comprehensive approach aims to improve operational efficiency, reduce resource losses, minimize reprocesses, and improve the overall quality of the products, thus contributing to mitigating the identified risks and strengthening INDSOL's position in the industry.

    Implementación de la metodología Lean Manufacturing para la mejora de la productividad en la industria metalmecánica

    El presente trabajo tiene como finalidad aplicar la metodología Lean Manufacturing para la mejora de la productividad en la empresa Talleres Barriga Sánchez” TABSA”, considerando el reto a innovar procesos, métodos y ser competitivos en el mercado. Por ende, se busca brindar soluciones a los diferentes problemas que causan retraso en la entrega del producto, dando lugar a la evaluación de las actividades que no agregan valor en los procesos productivos. En el presente trabajo de investigación se estableció parámetros para el eficiente desarrollo del proyecto a través de una revisión de la literatura sobre la metodología Lean Manufacturing, se realizó un análisis de la situación actual de la empresa, identificando actividades y áreas de trabajo, además se determinó el producto que representa mayor demanda en la empresa estableciendo registros de control para la toma de tiempos de producción de cada una de las actividades, como también la verificación de actividades que no agregan valor en la producción de asientos para buses, para ello se realizó la selección de las herramientas de la metodología Lean Manufacturing, como: la metodología 5´S, que permitió mejorar las condiciones de los procesos en la empresa TABSA, así como la metodología de control visual que permitió establecer las áreas de trabajo. Todo esto condujo a la elaboración de una propuesta de mejora en la producción de asientos para buses interprovinciales. Mediante los análisis realizados y el estudio de las herramientas Lean Manufacturing se determinó la implementación metodológica adecuada para el proceso de fabricación de la empresa “TABSA”, dando como resultado un incremento en la producción de 44 unidades a 54 unidades de asientos interprovinciales en un mes, con un tiempo estándar de 130:32:03 horas, además el valor actual de la productividad es del 1.01%, mientras que el valor después de la implementación de la metodología es del 1.14% dando lugar a una variación de productividad del 12,87%, gracias a la reducción de desperdicios y movimientos innecesarios, mientras que la metodología del control visual nos permitió distinguir claramente los puestos de trabajo en cada área de producción, lo que facilitó el reconocimiento rápido de la información relevante para cada una de las actividades realizadas por los operarios, esto a su vez, incrementó la eficiencia en la planta de producción, promoviendo la disciplina y la responsabilidad entre todos los miembros de Talleres Barriga Sánchez (TABSA).

    Mejora de la productividad en el área de inyección de piezas de plástico de la empresa Multiaccesorios M.G. mediante herramientas de manufactura esbelta

    In this research, the application of lean manufacturing tools is proposed based on the waste found in the injection process of plastic headbands at company Multiaccesorios M.G. First technical visits to the company were scheduled to collect data, obtaining information regarding the products offered by the company, demand and sales pertaining to the first 6 months of 2020, data that allowed an ABC analysis that determined the most relevant product for the company, that is the model 204 headband for universal upholstery, then the process survey, time study, analytical course chart and value flow mapping were elaborated, identifying the waste present in the actual process. Simulation of the production plant was created to compare its results with the data obtained by calculations and once the opportunities for improvement were identified, the lean manufacturing tools were appointed. Applying the 5's tool, an improvement in the workspace is recognized and together with SMED activities are optimized reducing unnecessary transport and movements. The standardization application allows the normalization of the initial activities of preparation of the injection machines, reducing the set-up times and with the balancing of lines it is proposed to enable a third injector and assign activities to one of the workers, eliminating the neck of bottle of the process and increasing weekly production. Finally, the economic benefits are analyzed, obtaining a semester profit of $ 13,838.16 as a result of the implementation of the assigned tools, after which the new proposed value flow map is presented and the simulation of the production plant is carried out with the improvements implemented, obtaining an increase of 5,844% in the productivity of the plant.

    Mejora de los procesos de producción mediante el estudio de tiempos y movimientos en la empresa de productos lácteos Rengifo Gallo “Poltreg”

    The study of times and movements represents a fundamental tool for the diagnosis and improvement of processes because it offers the possibility of determining processing times, standardizing processes and eliminating all unproductive activities or tasks in order to reduce waste of both time and money, contributing to the increase of production capacity and competitiveness in the market. The objective of the research project is to develop an improvement proposal for the cheese production line of the dairy products company Rengifo Gallo. A study of times and movements was carried out on the most demanded product, for which the performance index, supplements, and standard time of each process were determined, allowing to identify and eliminate unproductive activities and a new work model was proposed through the application of the Theory of Constraints (TOC), to create standards that contribute to increase productivity and efficiency.The TOC methodology made it possible to increase the production capacity of the bottleneck, that is, the salting process; a new salting method was used combining salt in grain and brine, which accelerated its absorption and thus reduced time; by applying the same methodology to the pressing process, it was possible to take advantage of the operators' leisure time to optimize the time of this activity by applying pressure on the cheeses. The elimination of unproductive tasks, the application of TOC and line balancing represented a 29.85% increase in production, that is, from 67 to 87 batches of cheese per week to meet market demand in a satisfactory manner. The verification and validation of the results were developed using FlexSim software, both for the current and proposed situation

    Metodología lean manufacturing en los procesos productivos de la empresa Confecciones Deportivas Piscis

    This research project focuses on developing Lean Manufacturing methodology in production processes at Confecciones Deportivas PISCIS company, proposing solutions based on specific tools and methodologies to optimize production. The most profitable product was identified from a survey of information, using analytical cursograms to describe activities, in the time study the General Electric method was applied and the timing back to zero for characterizing the current situation through the creation of the value chain map (VSM), identifying critical areas and opportunities for improvement. Through direct observation analysis, critical wastes were defined as defects, overproduction, and waiting times. Their causes were quantified to establish opportunities for improvement and through a bibliographic review allowed the selection of optimal tools such as JIDOKA, KAIZEN, TPM, and 5'S. These tools application generated corrective actions to eradicate production defects, an increase in OEE to 63.31%, and with the 5'S methodology a standardized work method was achieved, improving product quality and customer satisfaction. This systematic approach seeks to increase efficiency and competitiveness in the textile sector.

    Modelo de aplicación de las herramientas de manufactura esbelta para optimizar el proceso de producción en una empresa de fabricación en derivados de cartón

    El presente proyecto de investigación está enfocado en desarrollar un modelo de diseño de implementación de herramientas de manufactura esbelta en la empresa Mikrocartón, la cual se denomina como una organización dedicada a la fabricación de cajas de cartón de pizza, zapatos y todo tipo de empaques. El objetivo de la presente investigación es de diseñar un modelo de aplicación de las herramientas de manufactura esbelta para optimizar el proceso de producción en una empresa de fabricación en derivados de cartón. La información necesaria para llevar a cabo el objeto de estudio ha sido dirigida mediante la esquematización de un diagrama de VSM (Value stream mapping), el cual ha sido punto de partida para el diagnóstico de la organización. Se determinaron valores de takt time, lead time y producción estimada para determinar sus niveles de operación y ciclos del flujo de materiales, así como también el análisis de sus procesos estratégicos. Mediante los datos obtenidos por observaciones en campo se definieron los desperdicios y las pérdidas ocasionadas en el proceso de producción de cajas de pizza según el método de factores ponderados siendo estas mudas los tiempos de espera, inventario y transporte. Con la identificación de estos defectos en el proceso se procedió a analizar las herramientas de manufactura esbelta que podrían disminuir el porcentaje de actividades que no agregan valor. El estudio permitió identificar las herramientas de manufactura esbelta que permitirían optimizar los procesos de producción y reducir el desperdicio, basada en la reducción de tiempos de espera, las herramientas más viables en la empresa fueron 5S para fomentar la organización, limpieza, orden y estandarizado de proceso; Kaizen para determinar propuestas de mejora prontas y concretas a situaciones impredecibles y Kanban para determinar metodologías de tableros y tarjetas para facilitar el control de inventario. Basado en los hallazgos preliminares, se diseña una propuesta que engloba la aplicación de las herramientas de manufactura esbelta en la organización y se establecieron los compromisos y acuerdos de todo el personal para su implementación y mejora continua.
