Carrera de Ingeniería en Alimentos, 2019-09) Valencia Pérez, Patricio Geovanny; Briceño Carrasquel, Jorge AlexanderIn Ecuador, the recent activity of the Tungurahua volcano in 2016 caused the fall of ash and lava episodes, in which the sector where the highest ash concentrations were recorded was Quero. In this study, the content of metals in soils and carrots (Daucus carota L.) cultivated in agricultural areas near the Tungurahua volcano was considered. For the soil, the electrical conductivity and pH were determined at a ratio of 1: 2.5 p per v with distilled water and organic matter due to loss due to ignition. A fraction was made in royal water for total metals and a fraction in EDTA for available metals which were measured using an atomic absorption spectrophotometer of line, manganese, copper, iron, magnesium, potassium and zinc source with the flame atomizer, cobalt, nickel lead, cadmium and strontium in graphite furnace. Calibration curves were performed daily for each metal with monoelemental aqueous standards of certified reference. The soil was moderately acidic, with a negligible effect of salinity and very low organic matter content according to the standard of the Ministry of Environment of Ecuador and the content of all metals were within the values established by the same standard. In addition, the content of metals studied in carrots was found below the revised standards.
