We conducted several inspections, based on good feeding practices, determining the conditions under which they work do not cover the requirements established hygiene and sanitation. In order to improve the food service was held several internal changes according Ministerial 004-10 basis which involved the Ministry of Health and Ministry of Education of Ecuador aimed at controlling the parameters hygienic and nutritional indicators that allow food and beverages are prepared and expend them healthy, nutritious and safe while promoting healthy eating habits. Maestría en Gestión de la Producción Agroindustrial, 2017-04) Gordillo Vinueza, Ana Patricia; Ortiz Escobar, Jacqueline de las MercedesThe present investigation determined the current consumption of organic / agro ecological fresh food of the families of the province of Tungurahua, in three market segments according to the monthly economic income, through the application of a validated survey, and the analysis of the information obtained. It is estimated that 79% of the families consume organic/agro ecological food in the province, with families with an average income level having the highest consumption, while families with a high income level are the least consuming . In addition, among the variables of the survey, a main component analysis was carried out using the SPSS version 20 program, which allowed the identification of marketing, preferences and education aspects, in 54% of the family consumption of organic foods in the province. Finally, through Gretl software version 1.9.92, a logistic econometric model was proposed, which explains the consumption of fresh organic/agro ecological foods, based on the main components obtained and the family economic income variable. The supply of fresh organic/agro ecological foods was determined through interviews with expert informants and observations made by the researcher. It is concluded that the supply of this type of food in the province, could cover its demand up to 54%.
