Item Evaluación de la digestibilidad in vitro de un suplemento alimenticio dirigido a adolescentes entre 12 a 18 años, a partir de harinas precocidas de pseudocereales andinos: quinua (Chenopodium quinoa Willd.) y amaranto (Amaranthus caudatus)(Universidad Técnica de Ambato. Facultad de Ciencia e Ingeniería en Alimentos y Biotecnología. Maestría en Ciencia de los Alimentos, 2023-01) Carrera Borja, Washington Xavier; Paredes Escobar, Mayra LilianaAn efficacious mixture made from ancestral seeds: quinoa, amaranth, sacha inchi and chia has optimal protein and lipid profile. In addition, it was demonstrated through the analyzes in the RVA the obtaining of a homogeneous matrix with water retention capacity, gel resistance and film formation, which incorporates polyunsaturated fatty acids and precooked flours. By hydrolysis the protein in the supplement, a protein concentrate yield of 72 percent was obtained at a pH of 4.0. In addition, by means of the electrophoresis technique an immunoprotein band with a molecular weight of 30 KDa was identified, highlighting the globulin fraction 11S called chenopodin, known as an emerging allergen resistant to gastroduodenal digestion. Through the digestion process of the starch in the supplement, it was possible to verify the efficacy of the formulated matrix, obtaining 85.39 percent of starch slowly hydrolyzed to maltoses, reaching its maximum digestibility after one hour. When carrying out the characterization of the supplement, we can conclude that it does meet the nutritional requirements for adolescents according to the recommended daily intake recommended by the Food and Agriculture Organization of the United Nations. In addition, the incorporation of essential fatty acids in a microencapsulation to the pulverized precooked flours allows the matrix to be effective due to its bioaccessibility, absorption and subsequent transformation. The supplement obtained from ancestral seeds considered as golden grains has a protein profile suitable for adolescents and a balanced lipid profile. For its sensory acceptability, it was determined that the best treatment chosen for the panelists was the strawberry flavor sweetened with sucralose. The development of the research will strengthen food sovereignty, promoting the production of underdeveloped foods, contributing to the circular economy, reducing water consumption and promoting agricultural activity.Item Obtención de aminoácidos libres a partir de quinua orgánica (Chenopodium quinoa) por hidrólisis y su aplicación en un suplemento alimenticio(Universidad Técnica de Ambato. Maestría en Tecnología de Alimentos, 2018-06) Almeida Castro, Alexandra Cristina; López Hernández, Orestes DaríoThe present work seeks to provide an alternative to balance the diet, benefiting health, through the obtaining of free amino acids from organic quinoa (Chenopodium quinoa) by hydrolysis and its formulation in a food supplement. It began with the isolation of the proteins of degreased quinoa flour, in which an enzymatic hydrolysis was carried out working, with two independently tested enzymes, papain and Bacillus subtilis protease, the latter reached the best degree of hydrolysis 41,8 percet under conditions of pH 6,5, 55 Celsius degrees and 3 h; continued with acid hydrolysis, experimenting with two concentrations of H2SO4 4 and 8 percent, optimization of the process was achieved with a solution at 4 percent, 110 Celsius degrees and 8 hours of hydrolysis, 61 percent was obtained in the degree of hydrolysis which equates to a ratio between amino nitrogen and total nitrogen (AN / TN) of 0.6. The hydrolyzed protein of quinoa dried by spray was characterized through a liquid chromatography analysis (HPLC / FLD) allowing to identify 7 non-essential amino acids and 8 essential amino acids, whose representative values were in histidine with 5,5 percent, leucine 3 percent and 2,8 percent for threonine. 250 mg hard capsules containing 125,52 mg of non-essential amino acids, 121,98 mg of essential amino acids and 2,5 g of aerosil as a sliding were formulated, providing 39,47 percent of the requirement established by the FAO.Item El plaguicida orgánico de los residuos del lavado de la quinua (Chenopodium quinoa) y los nemátodos en cultivo en papas (Solanum tuberosum) en el cantón Quero(Universidad Técnica de Ambato. Maestría en Gestión de la Producción Agroindustrial, 2017-05) Núñez Solís, Verónica Jimena; Arancibia Soria, Mirari YosuneIn the present investigation the nematicidal effect of the water residues of the first wash of quinoa (Chenopodium quinoa) was studied. The first analyzes were carried out with a selection of in vitro nematodes at different concentrations of bionematicide, where it was determined that after 240 min, and at a concentration of 100% v/v washing water, nematode mortality increased (~ 94% ). Subsequently, a field study was carried out applying bionematicide to potato crops (Solanum tuberosum). The product was applied in different periods of potato cultivation as the seed stage (A), seed stage and rascadillo (B), sowing stage, rascadillo and aporque (C). The best results were obtained when the bionematicide was applied in the three stages of cultivation (sowing, rascadillo and aporque) where the nematode population was reduced by 86%. This study opens the possibility of using a residue from the processing industry of quinoa in the control of plant parasitic nematodes.Item Diseño de un Sistema de gestión de inocuidad alimentaria bajo la Norma ISO 22000:2005 para la planta procesadora de quinua de la Corporación de Productores y Comercializadores Orgánicos Bio Taita Chimborazo, COPROBICH(Universidad Técnica de Ambato. Maestría en Gestión de la Producción Agroindustrial, 2017-01) Andrade Albán, María José; Sánchez Vélez, Silvia JannethThe present document aims to establish a Security standard, for which a management safety system has been designed based in the ISO 22000:2005 International Standard by means of the integration of different handbooks, procedures and enforcements that shape the activities that are execute in the quinoa processing floor of Bio Taita Chimborazo organic Marketers and Producers Corporation, “COPROBICH”, the implementation of this system will constitute a key that opens the possibility of getting into international markets in an effective and efficient way. The development of this work started with a diagnostic evaluation of the company´s actual situation, for which a Test based on the ISO 22000:2005 International Standard was applied; the result threw a fulfillment percentage equal to 12. Afterward a documental system was structured according to the prerequirement programs that the ISO 22000:2005 International Standard stablishes. HACCP plan was outlined starting with the conformation of a safety group and the hazard analysis and critical control points of one and each of the stages that the procedure includes and organic quinoa commercialization, wherewith the test applied increased on a 52% of the fulfillment.
