dc.description | La kiwicha, conocida científicamente como Amaranthus caudatus L. es una variedad de amaranto de la que se pueden aprovechar sus hojas, tallos, y brotes. Considerado uno de los pseudocereales andinos antiguos más completos con características de alimento funcional. Su riqueza nutricional viene dada por su contenido en macro y micronutrientes tales como proteínas con un porcentaje de 13,4 superior a otros pseudocereales como la quinua y cereales como el arroz y el maíz; presenta todos los aminoácidos esenciales, cada uno de vital importancia para el correcto funcionamiento del organismo. Los hidratos de carbono sobresalen por ser nutrientes mayoritarios con un valor porcentual del 65,25; dentro de este grupo figuran azúcares reductores y no reductores, la fibra de tipo soluble e insoluble que cuida la salud digestiva. En cuanto a los lípidos, resaltan los omegas 3 y 9 por su papel de prevención de enfermedades cardiovasculares. Con relación a los micronutrientes presenta minerales como Hierro (Fe), Magnesio (Mg), Fósforo (P) y Manganeso (Mn), cuyo contenido satisface las recomendaciones de ingesta; vitaminas hidro y liposolubles, que cuidan la piel, corazón y otros órganos. Sus propiedades biológicas engloban actividades de carácter antioxidante, antimicrobiano, anticancerígeno, anticolesterolémico, entre otras, que conceden ventajas valiosas en la salud de los consumidores por prevenir y reducir el desarrollo de enfermedades crónicas no transmisibles. A pesar de ser una matriz alimentaria tan completa, es poco conocida y consumida, es por esto, que esta revisión bibliográfica proporciona datos cualitativos y cuantitativos de sus componentes para difundirlos y promover su ingesta. | es_ES |
dc.description.abstract | Kiwicha, scientifically known as Amaranthus caudatus L. is a variety of amaranth whose leaves, stems and shoots can be used for different purposes. It is considered one of the most complete ancient Andean pseudocereals with functional food characteristics. Its nutritional richness in macro and micronutrient content such as protein with a percentage of a 13,4 much higher compared to other pseudocereals such as quinoa and cereals such as rice and corn; it contains all the essential amino acids, each one of vital importance for the correct functioning of the organism. Carbohydrates stand out as major nutrients with a percentage value of 65.25; within this group are the reducing and non-reducing sugars, soluble and insoluble fiber whose main action is to take care of digestion. Regarding lipids, omegas 3 and 9 stand out for their role in the prevention of cardiovascular diseases. In relation to micronutrients, it contains minerals such as Iron (Fe), Magnesium (Mg), Phosphorus (P) and Manganese (Mn), whose content satisfies the intake recommendations; and water and fat-soluble vitamins, which take care of the skin, heart, and other organs. Its biological properties include antioxidant, antimicrobial, anticarcinogenic, anticholesterolemic, among other activities, which provide valuable health benefits to consumers by preventing and reducing the development of chronic non-transmissible diseases.
