    The research work is related to the application of the Quality Management Model for the production of Mora de Castilla, for which reason, the design of the quality management system is taken as reference to the International Standard ISO 22000: 2005, where the representatives and producers of the Agricultural Association Santa Lucia La Libertad will maintain order within the production plant and the cultivation areas, besides, it is important the use of this methodology that allows the commercialization of the product to international segments. The diagnosis or survey of the baseline was taken as reference to the International Standard ISO 9001: 2008, which allows the evaluation of quality management systems through the use of Check List for the production plant and partners of the association, the result framework 17.35% (production plant) and 21.47% (partners) of compliance, which means that it is necessary to apply rapid action measures, this is the training related to the topic of Good Manufacturing Practices, which allowed structuring the document or general manual that allows the fulfillment of the 50% test like production, soil management, material, risks, hygiene of the plots and fertilizers.

    Aprovechamiento de okara de soya (Glicine max) en el desarrollo tecnológico de tempeh.

    The environmental concern has forced to investigative way to take advantage of and reuse the waste generated by the food industry. Soybean okara for the development of tempeh, with Rhyzopus oligosporus, is an advantageous alternative for soybean industry. In the tempeh processing, six treatments were tested: T1 commercial polyethylene plastic bags, it is incubated at 30 ° C, T2 commercial polyethylene plastic bags, incubated at 35 ° C, T3 achira leaves, it is incubated at 30 ° C, T4 achira leaves, it is incubated at 35 ° C, PET-5 perforated tubercle, it is incubated at 30 ° C and T6 perforated PET-type, it is incubated at 35 ° C. For the sensory evaluation to the tempeh samples had previously been subjected to a heat treatment at 181°C with oil. The organoleptic evaluation was performed by 31 panelists (they are not trained), the treatments were tested in triplicate. Software InfoStat 2017 was used for the transformation of data in statistical information under an experimental design DFCA (Completely randomized design). This one allowed determining that there is no significant difference in color, texture of 6 different treatments. The flavor and acceptability grouped 5 of the 6 treatments as the best. The treatments elaborated in a plastic jar and achira leaf at 30 and 35 ° C were more accepted. The nutritional value of the tempeh obtained is good and the productive alternative, projected by the company PROSOYEC, is financially attractive and profitable under the cost analysis carried out.

    The market analysis was carried out on the 28 naturist centers in the city of Ambato, for which a field investigation was applied through the guided survey technique in a structured questionnaire, where the purpose was to know if consumers know about the functional products and the benefits that they offer, the research for their validation of results was submitted to the statistical process Chi Pearson table where it was verified that the population that makes purchases in naturist centers in the city of Ambato does not identify functional products and its benefits, the research emphatically concludes that the products among foods of the same food order are not competitive in prices, compared to it has made a marketing plan focused on three products rich in nutrients such as Sacha Inchi Omega 3, 6, 9, Silymarina and the Nopalina that has an average level of consumption in l the naturist centers for the reason that their health properties are unknown.

    Diseño de un Plan para mejorar la calidad del agua embotellada de la Empresa Municipal de Agua potable y Alcantarillado de Guaranda

    The research was developed in the Municipal Water and Sewerage Company of Guaranda (EMAPAG), aimed at designing a plan to improve the quality of bottled water considering the requirements established in ISO 10005: 2005. The initial diagnosis identified a 22 % compliance with the requirements of the quality plan. Through a Pareto diagram an order of priorities was assigned to the identified problems within which the planning, production and processes related to the client stand out. A survey was applied to clients and workers of the company to know the perception they have about internal aspects linked to production, establishing that the company does not have protocols implemented for the development of the activities involved in the water bottling process, as well as communication and feedback with the client. The quality plan designed for the company specifies what procedures and resources should be applied, who should apply them and when they should be applied. At the end of the research phase, the requirements verification sheet of ISO 10005: 2005 was applied again, reaching 84% compliance, which demonstrates the applicability and efficiency of the plan.

    Diseño de un Plan para implemetación de un Sistema integrado de gestión de calidad, medio ambiente y seguridad en la empresa de productos lácteos El Toril

    In order to develop the necessary processes for the implementation of an integrated management system within the EL TORIL Dairy industry, an initial diagnosis was made of compliance with ISO 9001: 2008, 14001: 2004 and 18001: 2007 requirements general for competition and improvement of each industrial level. In the same way we worked with the comparison between standards giving a result of links between the regulations, the same that is used to measure the quality in the work environment, the right environment and employee health. Based on the diagnosis obtained to the three regulations, we worked on the design of a plan for their respective implementation, so the points to improve are: policy and quality objectives, design and preparation of documentation, and the audit plan, which allowed to improve the management of the company EL TORIL dairy products. The dairy company EL TORIL considers that it is indispensable to carry out activities that guarantee the adequate performance of the company, which will be reflected in the quality of service offered to the customer, and continuous improvement.

    An optimal marketing system operates under certain productive parameters which are in relation to the transfer of the ownership of products by making a maximum effort to meet the needs of the client and achieve greater profits. In order to determine an optimal marketing system, the indicators were searched for the biggest impact and incidence through an analysis of articles selected according to the quality of studies that was presented and its application in government centers. As a consequence, there could be found the dimensions that generate the success of the system, such as: production, collection, distribution, and consumption. Moreover, the corresponding situational diagnosis of the ASOAGRICIS (Virgen del Cisne Agricultural Association) was carried out by identifying the meaningful problems in relation to the commercialization of agro-ecological horticultural products. Finally, marketing systems are a good alternative for consumers and producers of agro-ecological horticultural products because there is a demand to acquire them. Besides, families know how to produce in the agricultural sector, but they have shortcomings in terms of productivity turnover, sales and marketing management.

    Análisis de riesgos y puntos críticos (HACCP) para aseguramiento de la calidad en la línea de productos cárnicos cocidos elaborados en la Fundación Unión de Organizaciones Campesinas de Salinas FUNORSAL del cantón Guaranda

    The present work proposed a Hazard Analysis and Critical Control Points (HACCP) system for the line of cooked meat products elaborated in the Union Foundation of Farmer Organizations of Salinas, FUNORSAL, of Guaranda city that allows the assurance of the quality of its products in order to obtain better opportunities in the market reducing their percentage of returns. It began with a diagnosis of pre-requisites such as Good Manufacturing Practices and Standard Operating Procedures in addition to HACCP, after which the strategies were implemented through the development of procedures, records and instructions and the twelve steps of HACCP applied in the plant. The documentary part of HACCP was made 100%; while in plant implementation went from 0% to 50%; which allowed the decrease of the returns of the products from 2% to 0.9%.

    Sistema de gestión de la calidad según normas ISO 9001:2008 en el área de producción de la Asociación Fuerza Innovadora para incrementar su productividad

    Esta investigación determinó la relación entre las variables Sistema de Gestión de Calidad y productividad en la Asociación Fuerza Innovadora. El diagnóstico según la norma ISO 9001:2008, arrojó un nivel de cumplimiento general de 5%. Realidad que ha afectado el desarrollo de los procesos de elaboración de queso fresco y mozzarella, detectándose como principales problemas en el proceso, la contaminación por parte del personal e incumplimiento de los parámetros de calidad en leche cruda. La implementación de procedimientos según los requerimientos de la norma ISO 9001:2008 y controles en el área de producción se evidenció en los resultados logrados. El análisis de E. coli mostró una mejora significativa cumpliendo con lo exigido en la norma NTE INEN 1528:2012, en comparación con el método tradicional. Los indicadores de gestión de la productividad presentaron avances: la calidad de la producción se mantuvo óptima con un 99,8% de cumplimiento, disminuyó el margen de desperdicios de producto terminado con 31% en queso fresco y 70% en queso mozzarella. Se definió una eficiencia técnica de 62% y un nivel de mantenimiento nulo, pues no se contó con el apoyo de la directiva de la asociación en estos aspectos.

    Sistema de gestión de calidad para el mejoramiento de los procesos de producción de babaco en la Asociación de Productores Autónomos Río Chico El Rosal de la parroquia El Triunfo cantón Patate

    El presente trabajo de investigación tiene como objetivo, el desarrollo de la metodología para la implementación de la norma ISO 9001: 2015 en la Asociación de productores autónomos Río Chico el Rosal para mejorar los procesos de producción del babaco, tomando en cuenta que la aplicación de los requerimientos basados en la norma propuesta, ayudará a disminuir los problemas en los procedimientos de producción del babaco, por medio de esto se pretende dar información adecuada a todo el personal que trabaja en la Asociación sobre la forma apropiada de llevar a cabo cada fase de producción y el control de calidad que se debe realizar en cada uno de los procesos, con esto se reducirá los gastos por desperdicios, reprocesos y por ende se aumentará la satisfacción del cliente. En el presente trabajo se concluye que por medio de la implementación del sistema de gestión de la calidad basado en la norma ISO 9001: 2015, la asociación logrará disminuir un 2, 78% de los productos no conformes, lo que representa en unidades monetarias una cifra de $7.700,00. Además, se logró disminuir el tiempo de producción, eliminando las actividades innecesarias en los diagramas de proceso y finalmente se alcanzó concientizar a los trabajadores sobre la calidad en cada actividad por mínima que sea.

    Sistema de gestión de calidad en base a NTE-ISO/IEC 17025:2006 aplicado al laboratorio de análisis de alimentos de la Prefectura de Bolívar en la calidad en el servicio

    In order to develop the indispensable procedures for the implementation of a quality management system in the Bolivar Prefectural Food Analysis Laboratory, we worked with two tools that allowed us to know its initial situation, the first related to a diagnosis of Compliance with general requirements for the competence of testing and calibration laboratories based on the NTE-INEN ISO / IEC 17025: 2006 standard, which consists of two sections; Management requirements and technical requirements, the first being the object of study in which it achieved a 12% compliance. The second tool that allowed us to measure the quality of customer service through the comparison between what was expected and what was received was the Servqual survey, in which satisfaction results were obtained around 80%, evaluating 5 elements; Tangible, reliability, responsiveness, security and empathy. On the basis of the results obtained, a quality plan was executed, which allowed to organize the internal operations and generate the necessary documentation to demonstrate the implementation of the quality management system. Once the Quality Management System has been implemented, it is established the need to work on the technical processes in order to start with the procedures for the accreditation of the laboratory, which is why it is proposed to validate the microbiological methods used to Order to guarantee the results issued.
