IMPACTO DE LA ACTIVIDAD FÍSICA EXCESIVA EN EL DESARROLLO DE TRASTORNOS DE CONDUCTA ALIMENTARIA
(2025-06-18) Nieto Chávez Michelle Estefania; Guevara Villacís Mishelts Vanessa; Universidad Técnica de Ambato / Facultad de Ciencias de Salud / Carrera de Nutrición y Dietética
Excessive exercise fostered an obsession with weight and appearance, potentially leading to unhealthy eating patterns. The purpose of this study was to demonstrate that individuals who exercised compulsively or participated in high-performance sports experienced significant pressure to meet certain physical standards and followed extreme diets, which contributed to the development of eating disorders. A bibliographic review was conducted using the Prisma method, selecting 23 out of 225 relevant studies from databases including PubMed, Google Scholar, ProQuest, Mendeley, Medline, Web of Science, Scopus, and Zotero. The findings affirmed that physical hyperactivity constituted a high-risk factor for the development of eating disorders, and strict dietary regimens compromised the nutrition of young athletes. A key element in their recovery was the nutritional approach of gradual food reintroduction in small quantities until patients achieved full recovery. The study concluded by noting that a balanced relationship between nutrition and physical activity, coupled with the healthcare team's commitment to patients, would prevent the increase of such cases.

NUTRICIÓN INFANTIL Y DESARROLLO COGNITIVO, UNA REVISIÓN DESDE LA ETAPA GESTACIONAL
(2025-06-18) Sánchez Mayorga Damaris Nataly; Robayo Zurita, Verónica Alexandra; Universidad Técnica de Ambato / Facultad de Ciencias de Salud / Carrera de Nutrición y Dietética
During pregnancy the mother's body requires an adequate balance of macronutrients (proteins, carbohydrates and fats) and micronutrients (vitamins and minerals) to support both her own health and the development of the fetus. Incorporating a variety of foods in the diet ensures that diverse nutritional requirements are met, which is vital for preventing deficiencies that could hinder the growth and development of the newborn. A well-balanced diet not only aids in the physical growth of the fetus but also in its cognitive and neurological development. This becomes particularly crucial during the early stages of central nervous system formation, starting from the first weeks of pregnancy. Maternal nutrition directly influences the cognitive development of the child. Essential nutrients like folic acid, omega-3 fatty acids, iron, and iodine play a key role in the proper development of the brain and nervous system. A deficiency in these nutrients can result in cognitive developmental issues, such as learning difficulties or impaired intellectual growth. Inadequate or imbalanced maternal nutrition may compromise the child’s brain development, emphasizing the need for education and access to appropriate nutrition during pregnancy

ABORDAJE NUTRICIONAL EN PACIENTES CON ANOREXIA NERVIOSA
(2025-06-18) Llumitasig Andachi, Evelyn; Girón Saltos, Katherin Yaritza; Universidad Técnica de Ambato / Facultad de Ciencias de Salud / Carrera de Nutrición y Dietética
Anorexia nervosa is a serious eating disorder that affects a significant proportion of adolescents, although it can influence individuals of various ages and genders. It is considered a critical condition due to the severe risks it poses to both physical and psychological growth and development (Murray L, et al., 2021). This disorder manifests itself through excessive restriction of food intake, intense fear of weight gain, and distorted body image. Treatment of anorexia nervosa in adolescents requires a comprehensive approach that includes specialized nutritional interventions. The article reviews current strategies in the nutritional approach to adolescents with anorexia nervosa, focusing on recent research from the past four years to provide an updated view on best practices in the nutritional management of this condition. Anorexia nervosa is often a long-term disorder with a variety of psychophysiological and nutritional manifestations. Some patients may die from suicide or physical complications, with sudden death from cardiac arrhythmias being a common outcome. This disorder is not directly related to disease duration or age, but is associated with a body mass index (BMI) below 12 and very low serum albumin levels

LACTANCIA MATERNA PROLONGADA, MITOS Y REALIDADES DESDE LA NUTRICIÓN
(Universidad Técnica de Ambato/ Facultad de Ciencias de Salud /Carrera de Nutrición y Dietética, 2024-09-27) Quingaluisa Sandoval, Ana Isabel; Chávez Velasco, Irlanda de Lourdes
The World Health Organization recommends starting breastfeeding during the first hour of the baby's life, continuing its practice exclusively up to six months and complementing it with adequate nutrition up to two years or more. In Ecuador, rates are low, which is due, in part, to the fact that there are many beliefs that hinder its effective practice. Aim. Identify beliefs regarding BF and confirm whether or not there is scientific evidence to support them. Materials and methods. A literature review was carried out in different databases and other bibliographic sources. We searched for 40 studies and documents on the myths and realities around published between 2019 and 2024 and written in English and Spanish. Results. The initial search yielded 145 records, but only 40 met the inclusion criteria, which were grouped into 4 categories of beliefs: 3 established by Unicef (beliefs regarding the mother, the quality of the milk and what the baby needs) and 1 established by the authors (other beliefs). The superiority of breastfeeding over any other type of food, its fat content, proteins, immune and biologically active components play an important role in the protective effect for both the health of the infant and the mother.

EVIDENCIA CIENTÍFICA SOBRE EL MANEJO NUTRICIONAL DEL ADULTO MAYOR ENCAMADO
(Universidad Técnica de Ambato/ Facultad de Ciencias de Salud /Carrera de Nutrición y Dietética, 2024-09-27) Morejon Villarroel, Jemima Elizabeth; Guevara Villacis, Mishelts Vanessa
Population aging is a global reality, with a significant increase in the number of older individuals. As we age, the prevalence of chronic diseases and disabilities requiring long-term care also grows. Bedridden older adults are particularly vulnerable and face challenges due to their limited mobility and dependence on daily activities. This study focuses on caring for this population, addressing complication prevention, mobility promotion, and quality of life enhancement through novel and evidence-based approaches. It’s essential to note that when adapting food texture to enhance tolerance, we must maintain nutritional quality and appealing appearance to preserve appetite. Transforming food should not compromise its nutritional value, as this could further deteriorate the health of older adults. The most common complications may include the presence of sarcopenia in older adults. In summary, improving the quality of life for bedridden older adults requires a multidisciplinary approach. Different professionals must address the physical and physiological changes that influence disease onset. Nutritional treatment is crucial for maintaining physical and mental health, preventing chronic diseases, and promoting independence. Nutritional care should consider factors such as dysphagia, customs, socioeconomic status, and anemia. Ultimately, balanced nutrition tailored to the needs of older adults is essential for optimal and dignified aging.

INTERVENCIÓN NUTRICIONAL EN DEPORTISTAS DE ALTO RENDIMIENTO CON ANEMIA
(Universidad Técnica de Ambato/ Facultad de Ciencias de Salud /Carrera Nutrición y Dietética, 2024-09-25) Tuaza Manobanda, María José; Guevara Villacís, Mishelts Vanessa
Sports nutrition, a constantly evolving science, focuses on providing athletes with the nutrients necessary for training, competition, recovery and rest. This includes adequate energy, macronutrients for muscle repair, and micronutrients for physical performance. "Sports anemia" is a concern, characterized by low hemoglobin levels that can affect performance. Iron deficiency anemia, caused by iron deficiency, is common in athletes and can affect the body's ability to transport oxygen. Intense exercise can induce changes in the hematological system, contributing to this apparent anemia. Iron intake and bioavailability are essential, highlighting the importance of combining iron-rich foods with absorption enhancers and avoiding inhibitors such as tea and calcium. In athletic women, high levels of hepcidin can inhibit iron absorption, especially during intermittent fasting, increasing the risk of anemia and menstrual problems. Athletes, especially women, have higher iron requirements due to losses during menstruation and increased metabolism. Therefore, special attention to iron intake is crucial to maintain optimal performance in sport.

(Universidad Técnica de Ambato/ Facultad de Ciencias de Salud /Carrera de Nutrición y Dietética, 2024-09-25) Tovar Mejía, Marcela Salomé; Robayo Zurita, Verónica Alexandra
Nutrition in sports has evolved significantly in recent years, adapting to the requirements of athletes and changes according to the specific needs in the pre-competition, during and post-competition training phase. The correct identification of the nutritional status will allow the detection of nutritional risks, therefore, carrying out periodic nutritional interventions will avoid complications such as injuries, fatigue, fainting, cramps, electrolyte imbalance, dehydration, delayed muscle recovery, among others. Now, studies on ergogenic aids for sports nutrition impact athletes taking into account the increase in protein caloric requirement, carbohydrate intake, adequate hydration, or additional supplementation optimizing sports development, improving physical strength abilities. , resistance, speed and flexibility and increasing power when performing exercises. Inadequate nutrition and lack of physical activity are key factors in developing cardiovascular and metabolic health problems, overweight and obesity, especially in the young adult population. Therefore, the main objective of the research is to evaluate the pre-competition nutritional status of Zone 3 Cheerleading in order to contribute to improving nutritional status. The methodology used the collection of anthropometric data on weight, height, waist circumferences, bioimpedance evaluation and application of a food consumption frequency questionnaire. The population of Cheerleading athletes from the Cotopaxi Sports Federation (FDC) was considered who met inclusion criteria such as training for a competition, 3 years of experience, and accepting informed consent.

(Universidad Técnica de Ambato/ Facultad de Ciencias de Salud /Carrera de Nutrición y Dietética, 2024-09-25) Acosta Gallo, Bryan Israel; Viteri Robayo, Carmen Patricia
The risk of developing obesity associated with the consumption of processed and ultraprocessed foods leads to a multifactorial problem influenced by environmental, biological, psychosocial, socioeconomic, and political factors. The main objective of the review is to analyze the evidence that exists regarding the relationship between obesity and the consumption of ultra-processed foods. To achieve this, a bibliographic review was conducted to link the study variables; primary searches were conducted in databases such as Google Scholar, Elsevier, Eric, PubMed, Scielo, Mendeley, Dialnet, and Latindex, from the periods 2020-2024 by 90%. Among the results found in this review, the need to address the consumption of ultra-processed foods as a determining factor in the increase of obesity prevalence worldwide stands out. The evidence highlights the need to implement effective policies and strategies that promote healthy and balanced eating, as well as public awareness of the risks associated with excessive consumption of these highly processed products. Additionally, it is important to consider the socioeconomic and political factors that influence dietary consumption patterns, in order to develop appropriate and balanced interventions that address disparities in access to nutritious food. Furthermore, emphasis is placed on the need to address the structural and political determinants that perpetuate the availability and promotion of ultra-processed foods, including regulating the advertising of unhealthy foods, promoting sustainable agriculture, and creating healthier food environments.
