    Sistema de control y monitoreo para un túnel de ultracongelación de productos alimenticios en el Taller de Innovación y Desarrollo Tecnológico FISEI

    The objective of this project was to develop a control and monitoring system for a food ultra-freezing tunnel at the FISEI Innovation and Technological Development Workshop. To achieve this, the current system was analyzed, identifying critical parameters such as temperature and operation times. Subsequently, a functional prototype was designed and implemented, integrating sensors, actuators, a programmable logic controller (PLC), and a human-machine interface (HMI). The system design included the selection of appropriate components, PLC programming for process automation, window opening and closing systems, the construction of conveyor belts, and the palletizing system. Tests were conducted with different products, and each stage of the process was evaluated, from expulsion to final output, with the aim of optimizing time and ensuring the quality of ultra-frozen products. The results showed a significant improvement in system performance, reducing manual errors and ensuring ideal freezing conditions. Furthermore, the system allows real-time monitoring, facilitating data-driven decision-making. This project contributes to the modernization of industrial processes, promoting the use of advanced technologies in the food industry and ensuring a positive impact on productivity and product quality
