Item Aprovechamiento de las propiedades de Oxalis lotoides (Kunth) y sus potenciales usos industriales(Universidad Técnica de Ambato. Facultad de Ingeniería en Sistemas, Electrónica e Industrial. Maestría en Química, 2024) Ortiz Pérez, Tatiana Anabel; Pérez Aldás, Lander VinicioThe use of medicinal plants in Ecuador has shown constant growth, this growth is due to the therapeutic value that plants have according to their composition and active ingredients. These principles are involved in highly relevant biological processes and can be used in various industrial processes to obtain functional products. The aim of the research was to study the antioxidant and bromatological properties of the leaves and stems of Oxalis lotoides (Kunth) and their use in the formulation of an infusion. The plant material was dried at 70° C, ground to obtain a fine powder and the active ingredients were extracted using the Soxhlet method. The extract obtained was concentrated and stored in amber bottles. The antioxidant activity was determined by the DPPH method, and the bromatological characteristics were also determined by physical-chemical methods. The results for the ethanolic extract being the OLH treatment (Oxalis Lotoides Leaves) was 24.515 % while for the ethanolic extract of stems being the OLT treatment (Oxalis Lotoides Stems) was 50.193 %. The bromatological analysis showed the following values: humidity OLH = 8.190 % and OLT = 6.181 %; crude protein OLH = 18.2 % and OLT = 4.71 %; total fats OLH = 8.48 % and OLT = 4.44 % ashes OLH = 5.143 % and OLT = 5.766 %; titratable acidity citric acid OLH = 1.658 % and OLT = 0.662 %; pH OLH = 1.74 and OLT = 2.72 and soluble solids OLH = 4.157 % and OLT = 2.90 %. With the ethanolic extracts of leaves and stems, the microencapsulation process was carried out by spray drying with an inlet and outlet temperature of 150 ° C and 80 ° C respectively, with these microencapsulates the aromatic infusions were made which were evaluated by a panel of students using a hedonic scale, it was obtained that the infusion with the best characteristics of flavor, smell, color, appearance and acceptability was the OLH treatment.Item Evaluación de las propiedades antioxidantes y bromatológicas del fruto de la pitahaya, cultivadas en distintas localidades del cantón Palora, provincia de Morona Santiago(Universidad Técnica de Ambato. Maestría en Química, 2023) Chariguamán Coello, Lesly Anabel; Pérez Aldás, Lander VinicioLa pitahaya amarilla (Selenicereus megalanthus) se ha convertido en uno de los principales productos exóticos de exportación para el Ecuador. Además, las propiedades fisicoquímicas del fruto permiten su uso para la transformación agroindustrial del producto. Este trabajo tuvo como objetivo realizar la caracterización fisicoquímica y proximal del fruto de pitahaya amarilla en cinco localidades de la comunidad de Palora en la provincia de Morona Santiago. Se colectaron por triplicado frutos maduros en cinco fincas, debidamente geo referenciadas en este cantón. Se cuantificaron cinco descriptores físicos, siete químicos y la capacidad antioxidante de acuerdo con la NTC 3554 y AOAC 1997. El peso promedio de los frutos y pulpa evaluados fue de 271,49 g y 182,23 g respectivamente y con correlación del valor máximo en 308,78 y 232,04 asociado a los materiales estudiados. El análisis químico de la pulpa de fruta fue en sólidos solubles (ºBrix = 21,85) y permitió clasificarlo como un alimento medianamente ácido (pH = 4,98), adicionalmente su relación cáscara/pulpa fue comercialmente viable (> 60%). En cuanto a variables de importancia industrial como los análisis proximales se obtuvo resultados promedios de humedad= 81.63%, proteína= 0.63%, grasas= 0.44%, cenizas= 0.40%, acidez titulable cítrico= 0.1. Carrera de Ingeniería en Electrónica y Comunicaciones, 2022-09) Andrade Curipallo, Hernán Rodrigo; Pallo Noroña, Juan PabloThe present research work details the design and implementation of a prototype for a wireless monitoring system of a fish farm with LoRa technology for the production of trout in the Pelileo canton, which was installed in the ponds of the fish farm "San Vicente" in “Valle Hermoso”. The wireless monitoring system of a fish farm consists of three stages: end nodes, gateway and server. The final nodes are made up of analog and digital sensors installed in the trout value ponds for each stage of development, such as fingerlings, juveniles and fattening, which allow temperature, pH, turbidity and water level to be obtained. Information. Collected is sent to the Gateway using LoRa communication, likewise the information is sent to a website located on the local server, in this stage the light communication protocol MQTT was transmitted, the information published in the mosquitto broker is shown in a web interface developed in Node-Red through its visual programming in dashboards, the interface allows choosing the type of monitored pond and presenting the acquired values of the magnitudes at that moment, in addition, the data is stored in a database with the objective of Periodically record the quality of the water and make decisions in order to improve production. The system is made up of alerts that are sent by mail and by Telegram, they are to generate warnings to the owner when the measurements are outside the normal range, in order to reduce product losses due to inadequate defects. The prototype of the wireless fish monitoring system with LoRa technology is designed to be applied in places dedicated to fish farming, in addition, due to the great range in data transmission that borders open areas up to 20 km, it facilitates the owner to save time and resources. This research aims to provide a technological contribution to the updating of existing cultivation methods, reducing the attention needed for the cultivation of food and maximizing production by ensuring high quality in products, in turn facilitating the implementation of this type of technologies due their development with low-cost components. The present project has a practical affinity in the areas of Systems Engineering, Electronic Engineering and Agricultural Engineering because through the connection of electronic components can be made measurements that allow to obtain a general overview of state of the crops, the same ones that through a developed software can be visualized through a website that can be hosted on a server from which you can see the interactions that the system has. Thus, ensuring the optimal development of a crop with adequate parameters. This solution is based on the research line of Software Development, which is based on the development of a system, in this particular case a site was developed capable of receiving information on measurements obtained by electronic components to be visualized with events that allow the control of these. The main beneficiaries of this project are the people within the agro-producing sector, because of the low cost of development they can take it as a help to optimize their current farming methods.
