Carrera de Ingeniería Industrial en Procesos de Automatización, 2023-09) Arias Guerra, Jorge Luis; López Arboleda, Jessica PaolaAn effective process management implementation in an industry is essential for productivity levels improving, focusing on guidelines which add value to processes, products or services and promote continuous improvement in operations, for customer satisfaction level increasing by beating their expectations and requirements. Through this research development, a process management model has been proposed for the fresh cheese production line at "Lácteos MENTUR" company. The process standardization absence and the employee’s frequent rotation have an impact on the work organization, resulting in production failures and loss of resources for the company. In this study, information was gathered on production process for fresh cheese manufacturing. Processes, subprocesses, and tasks carried out in all phases of production were identified, from reception to storage of the final product, and a process map was drawn up to get a better view of the current state of the organization. Based on these data, a procedures manual was proposed to establish an operations standardization for the fresh cheese production; this manual will not only help to improve the company's efficiency and productivity but will also be a guide for future studies and a tool to train and induct new employees with the purpose of optimizing resources and increasing productivity in general.Item Modelo de Gestión por procesos para los talleres tecnológicos FISEI(Universidad Técnica de Ambato. Maestría en Producción y Operaciones Industriales, 2023-01) Chérrez Arroba, Juan Carlos; Morales Perrazo, Luis AlbertoThe lack of an organizational and operational structure, the ignorance of the processes that intervene in the provision of services of the Research, Innovation and Technological Development Workshops - FISEI has been the main cause for not executing the services they offer in a standardized manner. This is how this research aims to establish a process management model for its proper functioning in the development of its activities. For the execution of the present investigation, the PRISMA methodology was used as a search analysis tool and information collection, in this way an appropriate management model was determined for the context of operation of this site, so that through the identification of the processes in the provision of services of the technological workshops, the characterization of these, the design of the flow charts and their procedures, a vertical organizational structure was established due to the scarce personnel that the technological workshops have in order to that the processes and their respective activities are led by an administration and linked to the management and external departments that are part of the process in the provision of services. With this research, an appropriate process management model was established, agile, oriented to continuous improvement and with a standardized structure for its correct operation.Item Modelo de gestión por procesos en el área de producción de la empresa lácteos AMILAC(Universidad Técnica de Ambato. Carrera de Ingeniería Industrial en Procesos de Automatización, 2022-09) Conrado Mestanza, Bryan Sebastián; Ortiz Guerrero, Daysi MargaritaProcess management is the first step to improve performance levels of them within an organization, by virtue of which the standardized information guidelines allow adding value to processes, products, goods or services, so that there is a focus on continuous operations improvement for the sole purpose of meeting the needs or even exceed the expectations and / or requirements of customers. Through this research the development, a process management model is proposed for the yogurt production line of "Lácteos AMILAC" company. In which, it was evidenced that the main problem of the organization is related to the work methods used by the operators to carry out their operations, since they are developed without an adequate control, due to poor organization of work; generating delays and errors in the production because of the lack of well-defined and standardized procedures, reflecting in waste for company. In such virtue, we started with a survey of the information and processes in order to make a diagnosis of the current situation of the company. In this survey it was identified that the yogurt production line is made up of the phases of preparation, mixing, packaging, and storage; and each of these phases is composed of their respective sub-processes, which were reflected in a process map of the organization, together with the strategic and support processes of the company. Finally, to generate the proposal for improving the production process, a procedures manual was prepared to standardize yogurt manufacturing operations through procedures, registers and instructions that will serve to train and guide personnel, while increasing productivity and optimizing company resources.
