    Diseño de un sistema de gestión de calidad basado en la norma ISO 9001:2015 en la fábrica de helados ‘Rey de los Andes’

    The present research focuses on a Quality Management System (QMS) desing in accordance with ISO 9001:2015 standard for Rey de los Andes ice cream factory, a company dedicated to the production and sale of high – quality ice creams. The main objective of the project is to ensure that this organization complies with international quality standards, optimizing operations and increasing customer satisfaction. The study began with company’s strategic, operational, and support processes identification through the creation of a process map that illustrates how these processes are interrelated. Subsequently, an evaluation was carried out to determine the compliance degree of the requirements established by ISO 9001:2015 standard, using a checklist applied to chapters 4 through 10. Results have shown that the company achieved a compliance level of 47.45% with strengths in chapters related to operation and support, but areas for improvement in chapters related to performance evaluation and leadership. Finally, the required documentation for the QMS was generated, including procedures, matrices, records, formats, and instructions that meet the standard. This information is organized into a quality manual, which serves as a guide to implement, maintain, and improve the QMS. By adopting this system, the company will be able to enhance its processes, ensure the quality of its products, and strengthen its competitiveness at market.

    Máquina automatizada de congelación para el proceso de ultracongelación de alimentos

    This paper deals with the design and development of an automated freezing machine for the ultra-freezing process of foodstuffs. In the context of high competitiveness and technological advances, manufacturing companies need to modernize their operations. This project focuses on the implementation of control systems and production flexibilities. The research includes a detailed analysis of the refrigeration system, from the desing of the freezing tunnel to the implementation of a PLC for its control. The tunnel freezer operates an advanced process in which products are exposed to cold air streams at controlled speeds, allowing for a rapid and uniform temperature reduction. Results show that the developed system can reach ultra-low temperatures in record times, significantly reducing operating costs and increasing productivity. In tests, the machine was able to freeze food products in an average time of 12 minutes, guaranteeing optimal preservation of quality and freshness. In conclusion, the developed blast freezing machine represents a significant breakthrough in the food industry, offering tangible benefits in terms of quality, productivity and sustainability.

    Metodología híbrida para estandarizar el desarrollo de aplicaciones web, aplicando Normas ISO/IEC 25000 en la Empresa Eléctrica Ambato S.A. (EEASA)

    This project aims to develop a hybrid methodology to standardize the development of web applications in EEASA, the project arose from not having adequate documentation with which to apply best practices, methods, techniques or strategies for software development, which has caused problems during the development of a project and in the management of the life cycle. For the fulfillment of this proposal, the IEEE 1074 standard was used, adapting it to the organizational structure of the company and to the requirements obtained through the techniques of the collection and analysis of the information, with which the standard of the life cycle is established during the development of a web application, then a study was conducted based on knowing and analyzing processes, tools and work techniques of traditional and agile methodologies, among which the most representative ones were identified, which are; Waterfall Model, Spiral, Rational Unified Process (RUP), Dynamic Systems Development Method (DSDM), SCRUM, Extreme Programming (XP) and Crystal. After conducting a qualitative analysis of the methodologies, it became evident that the agile methodologies are adapted to the development of web applications and to the requirements set forth by the company. By working with the IEEE 1074 standard, it was possible to propose a hybrid methodology with a life cycle that contains groups of ordered activities that can be assigned a clear and detailed schedule, which the development team can follow step by step, and thus avoid excessive use of time during the development of a project or inconsistencies between the requirements and objectives set at the time of delivery of the product to the department, also by applying a software quality evaluation with the ISO/IEC 25000 family of standards, which is part of the activities that make up the methodology, the development team can obtain a report that verifies that the delivered product complies with quality standards.

    Destiladora automatizada para el proceso de alcohol de caña

    Technological progress in industrial sectors has driven the need for new analytical approaches that benefit society, especially in small and medium industry, by accelerating production and generating more opportunities. Automated manufacturing, resulting from the interaction between economic forces and technical innovations such as mechanization and food systems, has transformed global production chains. However, in the field of industrial distillers, small enterprises and artisans are excluded due to high equipment costs, dominated by multinationals. In Ecuador, despite the existence of ethyl alcohol producing companies, their global presence is limited compared to countries such as Brazil, Colombia and Peru. In the Pangua canton (Cotopaxi), small entrepreneurs face a lack of adequate equipment and resources, limiting the production of distillates and hindering exports. The growing importance of ethyl alcohol production from native plants, such as sugarcane, faces challenges due to low-capacity distiller designs, affecting the productivity and quality of the artisanal liquor. The project seeks to design an automated distiller focused on supporting entrepreneurs, improving the capacity and efficiency of the distillation process. This design will be developed at the School of Systems, Electronics and Industrial Engineering of the Technical University of Ambato, taking advantage of workstations that will promote innovation in process automation. This project is expected to boost the regional productive matrix, offering micro-enterprises a solution to compete and expand in the global market.

    Sistema de Gestión de Calidad basado en la norma ISO 9001:2015 para la industria panificadora

    Desarrollar un sistema de gestión de calidad (SGC) constituye una ventaja competitiva para las empresas ya que permite que sus productos y servicios cumplan con los máximos estándares, logrando mantener la satisfacción de sus clientes y su permanencia en el mercado. Es por esto que, se ha establecido diseñar un SGC basado en la norma ISO 9001:2015 para la Panadería y Pastelería “El Almendro”, la cual evidencia procesos deficientes debido a la falta de organización de la misma. La investigación se caracteriza por ser exploratoria, descriptiva y aplicada. Para ello, se diagnosticó la situación actual de la empresa mediante la entrevista al propietario, con la información obtenida se realizó el análisis FODA y se levantó el mapa de procesos de la empresa. Así mismo, se determinó las brechas en el nivel de cumplimiento de los requisitos de la norma, en donde se encontró que la empresa tiene un nivel de cumplimiento general de 8.10%, el menor cumplimiento fue con los requisitos de Evaluación de desempeño con 4.17%. Finalmente, se elaboró la documentación requerida para establecer el SGC en donde consta el manual de calidad, los procedimientos necesarios para llevar a cabo las actividades de la empresa, los instructivos de uso de la maquinaria y los formatos para los registros pertinentes del SGC.

    Sistema de gestión por procesos para mejorar la productividad en empresas de la industria carrocera

    El presente proyecto de investigación está enfocado en desarrollar un sistema de gestión por procesos con el fin de mejorar la productividad en la línea de furgones de la empresa Carrocerías Varma S.A, por medio de la recolección de información, el levantamiento de las actividades inmersas en cada proceso, el estudio de tiempos, con la elaboración de un mapa de procesos se identificó que existen actividades que no agregan valor al proceso productivo así también, las actividades y los procesos que realizan los operarios no poseen un adecuado control, ya que las mismas se realizan sin una correcta estandarización de los procedimientos, por lo que se desarrolló un manual de procedimientos para cada área, basado en el modelo de gestión por procesos. En tal virtud, se dio inicio con el diagnóstico de la empresa, para posterior realizar el levantamiento de cada uno de los procesos mediante su identificación, descripción y clasificación, mismas que fueron plasmadas en fichas técnicas para su estandarización. Además, se realizó un estudio de tiempos, el manual de procedimientos consta de instructivos y registros que permitirán a los operarios obtener una guía para realizar sus actividades. Con la ayuda de la planificación sistemática de la distribución de la planta se obtiene una distribución adecuada y se logra la reducción de los tiempos de producción en un 20% por ende un incremento en la productividad de 0,023 a 0,031.

    Metodología Dmaic Six Sigma para el control de la calidad del calzado de seguridad en la empresa Calzado Sinell

    The footwear industry suffered a severe impact in recent years as an effect of the confinement due to the 2020 pandemic, causing an 80% reduction in footwear production with respect to the previous year, leading to the closure of several companies or mass layoffs, especially for small and medium enterprises. Due to this situation, it was decided to control the quality of safety footwear by applying the DMAIC Six Sigma methodology at Calzado SINELL, aiming to improve production quality and maintain competitiveness in the market. The methodology used in the project was descriptive and field, applying the 4 phases of the DMAIC Six Sigma methodology (Define, Measure, Analyze, Improve) to the highest-demand product of the company Calzado Sinell over a period of 5 weeks of analyzed production. The main quality problem occurs in the sole attachment process and is the "excess or shortage of glue," representing 40% of all defects found. The Six Sigma analysis reveals that the process is currently unstable and out of statistical control, resulting in approximately 66 807 units are produced outside their specifications for every million produced, with a yield of 93,82% and a sigma level of 3,04. It concludes that the company does not perform adequate quality control on its product, leading to excessive process variability. This problem is caused by the lack of technical specifications and standardized processes.

    Modelo de gestión por procesos para el área de producción de huevos de la empresa Avícola Guadalupe S.A.

    Process management is a tool widely applied by companies in all areas in order to achieve efficient and effective management aimed at understanding, analyzing and improving procedures to promote continuous improvement and increase quality. The present work focuses on the operational processes in the egg production line of the company AVICOLA GUADALUPE S.À. specifying that it has twelve processes such as the adequacy of the shed, reception of birds, feeding, vaccination, transfer of birds to the laying shed, egg collection, pre-sorting of eggs, transport, washing of dirty eggs, classification, storage and dispatch: identifying activities carried out without specific techniques and lack of documented information, on the other hand, little communication of important issues between operators which blurs the primary objective of the company. This tool ensures that activities are carried out with clear and uniform instructions, which in turn promotes quality in the final product by guaranteeing consistency in the processes carried out by the operators. Finally, as a result of the study, the detailed processes and the standard time corresponding to each one were identified. In addition to knowing the bottleneck and capturing the information to provide a clear and accurate guide.

    Sistema de gestión de calidad en base a la Norma ISO 9001:2015 para la empresa “Curtiduría Hidalgo”

    This study is based on the research carried out to design a proposal for a quality management system for the company "Curtiduría Hidalgo" based on the ISO 9001:2015 standard. The main objective of this system implemented in the company was customer satisfaction through an improvement in processes and methods. In the first instance, the problem faced by the company in relation to the low efficiency of its management system is raised, framing shortcomings in its productive and administrative processes by not having clear and documented procedures, in the same way the objectives of the project are outlined, including the theoretical foundation and research background to support the proposal. The methodology used to solve the problem was then detailed, described the research techniques to be used which were mainly based on interviews with the manager and direct observation in order to obtain the clearest information to the current reality of the company; also defined the population and sample for data collection and detailed how the information will be processed and analyzed. Based on the gathered information, the analysis and interpretation of the results obtained through the research techniques are presented. The current situation of the company is described, followed by the use of a verification matrix to determine the degree of compliance with the requirements stipulated in the ISO 9001:2015 standard thus establishing non-compliances with the requirements found which will eventually create the manual of the quality management system in which guidelines such as documents, records, matrices, methodologies are established, formats and procedures focused on fulfilling the requirements of the standard.

    Sistema de gestión por procesos en la empresa de calzado KF Barona

    This research project is to standardise the production processes used in the manufacture of footwear in the company KF Barona, for which it was essential to analyse the current state of the company through a survey of information on the processes in which footwear manufacturing procedures, production time and time standards are exhibited, in order to have a global vision, diagrams and a process map were drawn up. With the information gathered through the collection of information by means of time analysis and the valuation of activities that add value, procedure manuals were drawn up for each production area. These documents contain complete, detailed and concise information on the procedures or steps to be followed at each stage of footwear manufacture with the respective persons responsible for each activity. An analysis of the activities that add value was applied, determining which of them are necessary and which are not, establishing criteria for improvement through the elimination, combination or reduction of activities, establishing new standard times for the execution of activities. A strategic plan is developed, which proposes two plans for supporting and improving production, the first is the training plan for incorporating new working methods based on simplification of tasks and production times, optimisation of the work processes, and the creation of a new production process.
